Assumption: The motivation for becoming vegetarian is the desire to not kill animals.
Like the couple I knew who used to buy meat direct from a farmer. They were happy to get their meat at a good price until one day they saw some animals being brought into the abattoir adjoining the farm shop. They felt some sort of pity for the beasts and have not eaten meat since.
Speaking for myself I rarely ( no pun intended) eat meat but that is because I don't trust what the wholesalers and processors do to it like pumping water into it "to tenderise it sir" and thereafter charging 'meat prices' for water and then there's the fake blood and lack of hygiene etc.
I don't have meat in my home. When I'm out, I eat all sorts of meaty rubbish, just as long as it's really well cooked. Anyhow the point of this rant, if anyone is still with me, is this. Why is vegetarian substitute meat made to look just like meat? How does a veggie burger look to someone who finds eating meat to be rather repulsive. Vegetarian bacon ? although that is horrid beyond description.
