Now my heart rate has slowed and the smouldering arse hairs have been taken care of, I started pulling the bike apart. All of the damage is on the offside, so far all I see is melted plastic, no damaged wiring. Suspiciously, there was a piece of  heat proof matting on that side of the exhaust.

Is it possible she is running ridiculously hot on one side (I am sure I read something somewhere)?

Coil failure to one cylinder causes that if memory serves. The unburnt fuel from the duff cylinder burns in the exhaust pipe after being ignited by the collector. Silencer gets screaming hot and melts the plastics.

Edit: a blocked catalyst can also allow the exhaust to get hot too. Found an old post from Greywolf.

 the silencer must have been glowing red to melt all that plastic.
Surely if the silencer was blocked you'd notice a running issue of some kind.

It was a little gutless the first time I took her out but on today's ride that was much improved, although she did splutter once.
I have only travelled short distances and at lower speeds, it is possible that she was firing on one

Edit: it wasn't just melted, there were full fat flames.

I'm pretty sure you would notice if it was running on one cylinder, there'd be less than 50% power, it'll sound awful and struggle to idle

Nothing that severe, I may swap out a coil and maybe a silencer from CJ and see what happens

At this rate, CJ may well be the donor for the undertray as well.

If the λ sensor is playing up does it allow more fuel through the cylinder without rough running?

Don't you be cluttering up A&E with trivial stuff like 3rd degree burns to the conkers.

I'd have been in severe need of a number 2 after that incident.

The other thing I'd check is the short fuel hose between the throttle bodies, they're known to leak, try rotating it to see if it's loose on the stubs.
I had a pool of petrol on the top of the crankcase between the cylinders.
I replaced the crimps on the hose with proper fuel pipe clamps (not jubilee clips) and all's been fine since.
